Today is Friday! Yeah!! What are your plans for the weekend? R has a riding clinic on Sunday and tomorrow the girls and I are baking goodies for a Pony Club bake sale being held during the clinic. Fun, Fun! We will be making Gooey Butter Cake and pumpkin bars. NOT low fat OR gluten free so I won’t (really) be snacking on them.  Today we may hit the library and we are finishing up some school work for the week –

J got her Zuca bag this week! (I am not being paid for this in anyway shape or form – we just really like the bag)

I ordered her the purple with black metal frame. I didn’t want to get something too “little girly” since she’s not so much a little girl anymore! I wanted the color to grow with her and not be something she wants to replace next year. And purple is a really cool color! They make the frame with a flat portion on top that doubles as a place to sit while your standing around at competitions waiting, waiting for your turn. Maybe I will be taking advantage of that 🙂

Now I just need to buy some plastic storage containers for the inside. EVERYTHING will fit !

J and I are staying in the cutest bed and breakfast along the way – We have the Grainnie O’Malley room reserved or “the Pirate Queen”  –

So far so good this week. I think I’ve done a fair job of staying away from the wheat.  A couple of pita chips here and there and yesterday one grass fed beef hotdog on  a bun. But other than that I’ve not grabbed a sandwich or had garlic bread – or homemade pizza, which really is sad.

It’s really not just to loose weight (but that is big motivation) but it’s also to see if the constant tiredness and constant congestion, constant irritation are tied into a wheat allergy – we shall see!

Thanksgiving is in one week. This is one holiday (well christmas is another) that I have always felt discord with.  Just the very fact that it wasn’t so happy go lucky as we were all taught in school and that whole groups of people were wiped out by the coming of the British (and others) to this country.  By greed.  But we “celebrate”. I celebrate the fact that I have 2 healthy children, a home, food, clothing etc.. I am very thankful for all of these things and more. But I am thankful for these things on a daily basis and really don’t need one day set aside to show that.

But I digress – Thanksgiving is in one week. In one week my youngest and I will begin our short journey to Grand Rapids Michigan so she can compete in her very first ever Oireachtas. I don’t remember the number of the other groups dancing the 8 hand ceili dance but I do remember there are 97 other girls dancing the traditional set dance – or St. Patrick’s Day – that she is competing against. And that is a small group.  She HAS been practicing nearly every day – with much prompting from mom. But this year is just a trial run, a see what it’s about run. If she places then I will be ecstatic! But if she doesn’t then I will still be ecstatic and super proud.

Picture from trial run ceili dance at a local feis. They took 2nd place.  Tonight is their last practice, next week is their pep rally and then we are off! I really cannot believe how these past 4 + months have flown by.

I need to loose somewhere between 10 and 20 pounds. Why? Just because. I’m not a large person by any means, I wear a size 10 in pants. But I’m not happy or pleased with my posture OR my muffin top:) It has got to go. I just want to be in better shape and feel better about myself. My goal this year is to buy a new bike and start riding again.  I love riding and pretty much gave it up for years after moving into the apartment before we purchased this house. My 15 year old rides horses, my 10 year old Irish dances and my husband does martial arts. I’ve decided it’s past time for me to start doing what I enjoy also. Maybe I will throw in  some yoga as well.

My husband and I are also planning on giving up wheat/gluten. I do believe that is what is causing my recent weight gain. I’ve been eating super crappy. Oh – all homemade of course, but still, lots of breads, cheeses, and sweets.  Eating homemade goodies does not always equal eating healthy!!  Today is my first day actually not eating something loaded on bread or with cheese. We will see how I do. I’m using this blog to hold myself accountable.  LOL!

We are officially 10 days out from the Oireachtas!!! Major countdown has begun! My husband and I have decided to surprise J and get her a Zuca bag – Very cool bags that double as a seat when you are cramped for space at a Feis – and they roll so you are not lugging all sorts of feising supplies all over the place. It should arrive today!  Now all I have to do is pack it. Buy new socks and glue. Wash and iron her shirt and skirt, make sure we have enough bobby pins and rubber bands and get myself packed! Rent a car and find a hotel room 1/2 way for Thursday night and I think then I will be done!

Today R has a riding lesson this evening. J has a private dance lesson this morning and I get to call the orthodontist yet again! because we are still having trouble with this silly little button on her molar that is supposed to hold the rubber band! Gah! It’s very frustrating. This whole process is very expensive and we’ve had issues with this button twice already!!  Hopefully, hopefully they will fix it for good this time!

Hey! Posting 2 days in a row! Maybe I can keep this going 🙂

Tuesday nights my youngest has Dance – Well Thursdays and Fridays as well but today we’re just going with Tuesday.  Dinners on these evenings are sometimes sketchy affairs. Sometimes I prep the meal and my husband or 15 year old get it in the oven and when I get home I finish it up. Sometimes no one cooks so I cook when I get home and we are eating dinner somewhere around 8:00.  Sometimes my hubbie actually COOKS THE WHOLE MEAL! Sometimes.  Sometimes my daughter cooks the whole meal and last night was one of them.

Since the weather here in Missouri has been cold and rainy these past few days, I have been craving lasagne. So on  Sunday, when I had had a friend over with her 2 girls and we watched Pride and Prejudice while eating a store bought Costco lasagne, salad and garlic bread. Some wine for the mom’s and we had a great evening.  Eh, but the lasagne was so so.

Last night my 15 year old made lasagne.  Ravioli lasagne. It’s one of her  “specialties” and she makes a mean ravioli lasagne. It’s not boil the noodles, layer 5 layers type of lasagne but it is good nonetheless. Paired again with salad and warm bread it was a fantastic meal. Just what I have been craving on these cold, wet, dreary days.

AND I have leftovers for today!

Ravioli lasagne-

2 packages of your favorite boiling lasagne – we used the spinach, artichoke fresh ravioli from trader joes

1 jar pasta sauce

1 bag spinach

1 bag or about  2 cups of shredded mozzarella cheese.

Sometimes I also add a zucchini, very thinly sliced, in among the layers of the pasta.

Putting it all together is vary simple.

Layer sauce,  ravioli, sauce, spinach (or whatever veggie you choose), cheese and repeat. Making sure you end with the cheese.

Bake it at about 400 – 425 until nicely browned and serve with a salad of some kind and wine 🙂
